Whole Wheat Flour String Hoppers Recipe (Atta Flour Idiyappam)

Ingredients
  • Roasted whole wheat flour/Atta flour - 300g
  • Hot water - 225ml
  • Normal water - 175ml
  • Salt - As you need
Instructions
  1. Take a large bowl and add the roasted whole wheat flour.
  2. Mix the hot water, ordinary water, and salt together. (Refer Note 1)
  3. Pour the water into the whole wheat flour little by little. Don’t let the water’s hotness gets down.
  4. While you pour the semi-hot water little by little, mix them using a spoon.
  5. Now, kneading the dough with your fingers to smooth and doesn’t stick.
  6. Wash your hands, string hopper press, and string hopper trays.
  7. Now, fill the dough in the string hopper press and press both handles to squeeze onto the string hopper trays. (Refer Note 2)
  8. Heat the water in a string hopper steamer.
  9. Once the water boiled, place the string hopper trays in the steamer. Cook covered under high flame until the string hoppers cooked well. It may take about 2 to 4 minutes. (Refer Note 3)
  10. Now, take off the trays and let them cool down.
  11. Finally, remove the string hoppers from the trays.
  12. Repeat the same process until you done with the dough.
  13. Serve and enjoy these Sri Lankan style easy and healthy whole wheat flour string hoppers.
Notes
Note 1: For this particular recipe, the water hotness level impacts a lot in final string hopper’s softness. The water shouldn’t be very hot or normal hot. It should be in semi-hot stage. That’s why I mixed very hot water with normal water and make it into the semi-hot water.

Note 2: Don’t fill the dough to edge of the string hopper press. It will make you hard to press/squeeze. Just fill around 90% or less of the string hopper press.

Note 3: Basically, whole wheat flour string hoppers cooked little faster than other flour string hoppers. So, don’t let them cook a long time.
