Ingredients
  • Pork - 500g
  • Onion - 100g
  • Curry leaves - Few
  • Thin milk - 250ml
  • Water - 400ml
  • Curry powder - 2 tablespoons
  • Turmeric powder - ½ teaspoon
  • Mustard seeds - ¼ teaspoon
  • Fennel seeds - ½ teaspoon
  • Lime - ½
  • Salt - As you need
  • Cooking oil - As you need
Instructions
  1. Take the pork and cut it into small pieces.
  2. Add turmeric powder, salt, and water. Rinse it well. Repeat the same for one more time. (Refer Note 1)
  3. Drain all the water and add turmeric powder and salt. Mix it well and leave it to marinate for 15 to 30 minutes.
  4. Get ready with sliced onions, curry leaves, lime, curry powder, mustard seeds, fennel seeds, and coconut milk. (Refer Note 2 and Note 3)
  5. Heat the oil and add mustard seeds. Let it splutter.
  6. Add the onions and sauté it until it gets soft and translucent.
  7. Add fennel seeds and curry leaves. Stir and cook until the onion turns into golden color.
  8. Now, add the marinated pork.
  9. Add the water and mix everything well.
  10. Cook covered under the high flame for 13 to 15 minutes.
  11. Take off the lid, stir and mix everything. Cook covered again under high flame until all the water disappears. For me, it takes about 5 minutes.
  12. Now, take off the lid, cook uncovered and stir occasionally until the pork gets frying.
  13. Add curry powder and coconut milk. (Refer Note 3)
  14. Mix everything well and cook covered under low flame for 5 to 7 minutes. (Refer Note 4)
  15. Finally, switch off the flame, add lime juice and mix everything.
  16. Taste the gravy and add salt if needed.
  17. Serve and enjoy this delicious and easy pork curry with coconut milk recipe in Sri Lankan style.
Notes
1. Pork has a kind of bacteria. So it’s good to wash it up at least 2 times with turmeric powder and salt.

2. I instantly made coconut milk from grated coconut. If it is hard to find grated coconut, use coconut milk powder or bottled coconut milk.

3. If you don’t like more spiciness, you can reduce the amount of curry powder.

4. Some people don’t like a thick gravy. In such case, it’s enough to cook 3 or 4 minutes.
