Ingredients
  • Pazhaya soru/Leftover rice - 2 cups
  • Water - 500ml
  • Semi thick coconut milk - 350ml
  • Onion (Shallots) - 100g
  • Green chili - 2
  • Lime - ½
  • Salt - As you want
Instructions
  1. Take the leftover steamed rice and add water in it. Cover and leave it overnight, at least 8 hours.
  2. On the next day morning, take the fermented leftover rice. Besides, chop the onions and green chilies. Apart from that, prepare the coconut milk and take the salt along with lime.
  3. Now, smash and squeeze the fermented leftover steamed rice using your fingers.
  4. Add onion, green chili, and salt. Again mix, smash, and squeeze everything using your fingers.
  5. Finally, add coconut milk and lime.
  6. Give one last good mix using a ladle.

Notes
1. Brown rice is better than white rice for this recipe.
2. If you make the rice for lunch add the water before you go to bed at night and make this recipe the next day morning.
3. Using shallots is better than the large onion. If it is hard to find shallots, use the large one.
4. Instantly made coconut milk from grated coconut is better than coconut milk powder or bottled coconut milk.
5. You can reduce or increase the water and coconut milk as you want.
6. If you don’t like more spiciness reduce the number of green chilies according to your taste.
